Matteo Guida

Established since 1972 in a building that was a bistro and bakery, Le Restaurant du Cheval Blanc is a reference for lovers of Italian gastronomy. Since March 2022, Matteo Guida, originally from Piacenza (Emilia-Romagna), has been the maestro in the kitchen. Having started at the Grand Hôtel du Golf de Crans Montana, he was also sous chef at Il Lago at the Four Seasons Hôtel des Bergues, and at Domaine de Châteauvieux. It was with internationally renowned multi-star chefs, the Italian Bocuse Gualtiero Marchesi, founder of new Italian cuisine, Heston Blumenthal, Michel and Alain Roux in England, that he learned his lessons.




His professional journey took him to Russia where he was executive sous chef at the Four Seasons Hotel Moskva in Moscow and executive chef at the Four Seasons Lion Palace in Saint Petersburg. This allowed him to acquire a global and operational vision of his profession. His dishes are amazing, delicious, joyful and generous. We will mention at random, raw artichokes, Sardinian bread tile, Parmesan , langoustine crudo, roasted fennel, lampascioni (wild onions) , vitello tonnato in thin slices of veal filet mignon, tuna cream, celery stalk, leaves capers , carpaccio of beef fillet with black truffle, mushroom mousseline, thin slices of cardoncelli (mushrooms typical of the Puglia region), poorly cut homemade pasta (Emilia-Romagna region), ragu' (sauce ) of veal, Parmesan fondue, strong veal juice , saffron risotto, beef cheek, cocoa-bound juice , free-range chicken supreme, extra soft, potato millefeuille, Jerusalem artichoke mousseline with broken truffle, truffle juice and to finish, the Sicilian orange and Bronte pistachios salad, mandarin sorbet and a dash of extra virgin olive oil . Everything is exquisite and extra! Guy Vulliez, the director of the establishment, as jovial as he is experienced, carefully ensures that the welcome and service are an invitation to “La Dolce Vita”, both in the elegant room and under the shade of the terrace. in the summer.
